Carol Mayfield

Carol was the 7th and youngest child of Agnes Lavin and Axel Herman Lundgren. She followed siblings Lillian (Gray), Allen, Rose (Hansen), Virginia (Bierman), Berniece (Heinz) and June (Bagley) to Columbus Elementary, Irving Junior and South High Schools, and now in death. Carol married Robert W Mayfield in the SL Temple on Sept 15, 1947. They are parents of 5 wonderful children – Steve (Charlene), Randy, Connie (Todd), Scott (Sally) and Lisa (Jim). She dearly loves her 17 grandkids, 40 great grandkids and 2 great-great grandkids.

Carol has fond memories of being mentored by all of her big sisters and brother, camping with her young family, serving Primary children and in other Church callings, caring for and being served by new and old ward members who she appreciated so much, and sometimes reluctantly sailing in Bob’s boat – the “Carol-less”.

Everyone in the family owns at least one quilt masterfully created by Carol. She excelled at sewing and making homemade craft items. Family members loved the way she laid out special occasions and holiday dinners and gifts – always sharing her love, thinking of others and not wanting attention. She was always up for a friendly conversation, had a wonderful sense of humor and an always sharp mind.

Without a doubt her kids, grands and great grandkids were her top priority and earned her full love and adoration …… she never forgot a birthday. Her wonderful collection of nieces and nephews were also always on her mind, and she was so proud of her full Swedish heritage.

A short Graveside service will be held Thursday, July 27, 2023, 10am, at the South Jordan Memorial Cemetery 1055 W 10650 South.

Carol was planning for a beautiful spring or autumn service, but someone had other plans. Because of the heat, if you attend, please feel free to dress as casual as you’d like …….. oh, and if you feel like honoring her by wearing something in her favorite colors - she loves purple and blue.

And ….. a huge thanks to a few of Carol’s newest friends and hospice providers – Sara and Alli, who Carol confided in as they took such loving care of her through some very tough times. We are so grateful for them, and thrilled they will continue with Bob. We also very much appreciate the good folks at Jenkins-Soffe Mortuary.

In lieu of flowers, Carol asks that you enjoy an outing with your children, grandchildren, or other loved ones.
