In Loving Memory of Edward Craig Poole
"Don't judge a man's whole life by the chapters you didn't like."
January 2, 1955 - October 7, 2026
Edward Craig Poole, known to family and friends as Craig, was born on January 2, 1955, to Carl and Ruby Poole. The third of seven children, Craig was raised in West Jordan, Utah, where he developed a love for the outdoors and a strong work ethic that would remain with him throughout his life.
Craig primarily worked as a union truck driver in the excavation industry, a career that suited his love of trucks, the open road, and a good day's work. He especially enjoyed hauling oversized loads and occasionally traveled across the country transporting oversized equipment. These long-distance trips gave him the opportunity to experience the country from behind the wheel, doing work he truly enjoyed.
Throughout his life, Craig experienced the joys and challenges that come with family and relationships. One of the most lasting parts of his life's journey was the family he helped raise and the generations that followed. Craig was the father of three children: Lyle, Amie, and Casey. His family grew to include 10 grandchildren and 12 great-grandchildren, creating a legacy that will continue for generations to come.
Craig was an excellent mechanic and a skilled handyman with a natural ability to figure things out and make things work. Whether someone needed help fixing a vehicle or tackling a home remodeling project, Craig was always willing to lend a hand. He worked efficiently, took pride in the quality of his work, and had a knack for making even difficult jobs look easy. But Craig was about more than hard work and practical skills. He had a great sense of humor, a quick wit, and a talent for joking with the best of them. He could come up with a clever remark in an instant and had a way of bringing laughter into a conversation. Those who knew him will remember his ability to make people laugh just as much as his ability to fix just about anything.
Above all, Craig was a kindhearted man who loved people. He had a way of giving everyone the benefit of the doubt and treating others with the kindness and respect they deserved. Craig was the friend that friends loved to have—someone people genuinely enjoyed being around, could laugh with, and could count on for a helping hand. His genuine care for others made him special, and the friendships he built were an important part of his life.
When he wasn't working, Craig enjoyed fishing and spending time outdoors. He appreciated the peace of being outside and doing the things he loved, carrying the same practical, hands-on approach to life that defined so much of who he was.
In his later years, Craig held tightly to his dream of building his own cabin in the mountains and living off the grid. He envisioned a simpler life surrounded by nature, where he could enjoy the peace, quiet, and independence that meant so much to him. Though his health eventually prevented him from making that dream a reality, it remained a reflection of his love for the outdoors and his desire to live life on his own terms.
Craig is survived by his three children, Lyle Poole (Lindsay), Amie Johnson (Justin), and Casey Poole; 10 grandchildren; and 12 great-grandchildren. He is also survived by his brother Mike, sisters Jody and Ronda, and brother Brad.
Craig was preceded in death by his parents, Carl and Ruby Poole; his sister, Cathy; his brother, Brent; and several close friends who held a special place in his life.
Craig will be remembered for his hard work, mechanical skills, quick wit, and kind heart. He shared his talents generously and brought laughter and friendship into the lives of those around him. Though he never got to build his mountain cabin here on Earth, we can find comfort in imagining that Craig has finally found his perfect place—a cabin in the sky, with the mountains all around him and no roads left to travel unless he chooses to.
A memorial service celebrating Craig's life will be held on Saturday, November 7, 2026, at 10:00 a.m. at Jenkins-Soffe Mortuary, 1007 W. South Jordan Parkway, South Jordan, Utah 84095. Family and friends are welcome to gather to remember Craig and honor the life he lived.
