Jay Allan Jackson, age 69, passed away on August 6, 2024 from liver cancer. Jay was born on September 11, 1954 to Ray and Mildred Jackson in Salt Lake City, Utah. He was the surprise caboose of 8 children. Because of the age gap between Jay and his siblings, he was like an only child, with his nieces and nephews being more like siblings. Jay recalled his childhood fondly and shared stories of camping and fishing adventures with his parents, and taking the bus to Salt Lake with his mother to do shopping. He would remark that he didn’t realize back then how good he had it.
Jay’s love of fishing continued throughout his whole life. He was an avid fisherman and has pictures to prove that his fish was that big. He also loved taking friends and family out for a day of fun on his boats. Jay had a cheesy sense of humor and loved to tell jokes. Some of them were even funny. Jay started working as a meat cutter and found his niche. He worked for Smith’s as a meat cutter for 30 years and enjoyed the friends he made there. Jay also worked as a real estate agent. He said that it was a perfect job for him because he could make money by working with people and showing houses, which he loved.
Jay became a step-dad to Gina, Benjamin, Ruth Ann, Diane, and Rachel when he married Elizabeth Meek. His daughter, Aundrea Michelle Jackson, was then born. He adored our sweet little Aundrea, who, with her physical disability, was infant-like her whole life. Generations to come will have many amazing photos of Aundrea to enjoy, as Jay would use his photography skills to take rolls and rolls of pictures of her cuteness. Even though Jay and Elizabeth divorced, Jay was always a father-figure to and involved in the lives of his step-children.
Jay was a member of the Church of Jesus Christ of Latter Day Saints and was in the Jordan North 3rd Ward.
Jay was preceded in death by his mother and father, his daughter, Aundrea, his sister Joan Law and her husband Jim, his sister Faye Young and her husband Troy, his sister Marba (Larry) Evans, his brother Billy Ray (Karlene) Jackson, and his brother Grant Murray and his wife Maureen.
He is survived by his sister Sherrie Jackson, his sister Elaine Horsley and her husband Jack, his brother in law Larry, his sister in law Karlene, his step children Gina Meek, Benjamin Meek, Ruth Ann (Scott) Shaw, Diane (Matt) Gayler, and Rachel (Derek) Tollestrup, and many nieces, nephews, step grandchildren and step great-grandchildren.
There will be a viewing for Jay on Friday, August 9, 2024 from 6:00-8:00 pm at Jenkins-Soffe Funeral Home on 1007 W South Jordan Parkway in South Jordan. There will be a graveside service on Saturday, August 10 at 11:00 am at Redwood Memorial Estates on 6500 S Redwood Road in West Jordan.
